L’Abysse Monte-Carlo awarded at Gault & Millau 2025
L'Abysse Monte-Carlo, the mecca of sushi artistry orchestrated by Yannick Alléno and sushi master Yasunari Okazaki, was awarded the prestigious distinction of 17/20 - synonymous with "table de prestige" - just a few months after opening in July 2024, at the latest Gault & Millau Awards ceremony held on Monday 18 November.
A unique concept: modernity meets tradition
At the heart of the Hôtel Hermitage Monte-Carlo, Abysse Monte-Carlo combines the modernity of Yannick Alléno's French cuisine with the purity of Japanese tradition embodied by Chef Yasunari Okazaki. Inspired by the four elements: the soil of Monaco's vegetables, the fire of masterful cooking, and the water and air of exceptional sushi, the two chefs offer an experience where innovation and sustainability redefine marine gastronomy.
A tribute to the Mediterranean and the art of sushi
Each creation tells the story of the seasons, thanks to close collaboration with responsible fishermen. This quest for perfection extends to the ancestral technique of Gyotaku, where an ink printing of the fish served is offered to the recipient as a unique memento of the culinary experience.

Envisioned as a sensory and mental haven, the décor, designed by Laurence Bonnel-Alléno, immerses guests in a soothing and sophisticated atmosphere. Wood, marble, and velvet combine with contemporary Japanese style to create a timeless experience.

The neighbouring restaurant, Pavyllon Monte-Carlo by Chef Yannick Alleno, also received a very high score of 16/20.
